I threw so many yummy things into this salsa that it just HAD to be good. And it was. This is one of those snacks that is so addicting that you can’t stop munching! But with a practically all veggie ingredient list you don’t even have to feel guilty about it. Well…maybe except for all of the tortilla chips you’ll need to wash it down with.
New rule. Veggie dips cancel out tortilla chips. There. We’re all set.
Juicy sweet corn, orange pepper, red onion, mango, lime……
Excuse me a second while I run to the fridge for some more corn dip. Just kidding. Sort of. Actually we ran out of tortilla chips. It’s tragic. But there is always a spoon.
Summer’s not over yet guys! Go make yourself some corn dip and invite your friends over.
Anyone want to come over? And bring some tortilla chips?
- 4 ears sweet corn, cooked
- 1 orange pepper, chopped
- ½ red onion, diced
- 1 mango, chopped
- 1 tablespoon olive oil
- 1 lime, juiced
- ½ teaspoon kosher salt
- ½ teaspoon cumin
- pinch of red pepper flakes
- pepper, to taste
- {Optional} chopped cilantro would be delicious if you like that sort if thing! I'm in the "cilantro tastes like soap camp".
- Boil (or grill!) the corn until done. Cool. Cut corn off cob.
- Combine all of the remaining ingredients and toss well.
- Stir in the corn.
- Taste and adjust seasoning as desired.
- Enjoy immediately or chill in the refrigerator until ready to serve.
