I don’t do resolutions per se, but I did set a goal to not eat any refined sugar or flour during the month of January. I’m not being super legalistic about it because we all know that there is sugar in everything. So I’m not counting condiments, but otherwise I am being fairly strict with myself. No bread, crackers, desserts. etc. My biggest reason for this goal-of-the-month is to curb the rather mindless eating I have been doing. Snacking on the kids’ lunches? Guilty. Indulging my sweet tooth. More guilty.
Nothing sweet for a whole month though?! I had to come up with something. Enter Healthy Chocolate Banana Pudding. This pudding is thick, rich and delicious. And totally healthy. Oh! And have I mentioned that it has only 5 ingredients and is a snap to make?
So, here’s to satisfying your sweet tooth in a perfectly healthy kind of way! I hope you’ll enjoy this pudding as much as I did.
- ⅓ cup chia seeds
- 1 cup unsweetened almond milk
- 1 banana
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon maple syrup
- Place all ingredients in a high-speed blender and blend until smooth.
- Chill for 1-2 hours or overnight.
